| Vin Santo "holy wine" is the symbol of Tuscan hospitality. It is a passito wine, made by air drying white grapes for several months on mats in the Torre Grande ("main tower") of the castle. The dried grapes are pressed in December, and the concentrated juice is put into small, ancient chestnut barrels ("carratelli") with the bungs cemented shut. These casks are never completely emptied...they hold the "madre" (similar to a "mother-of-vinegar"). The small casks are then stored in a loft or attic space (at Poppiano,the Vin Santo is kept on several levels in the tower of the Castel). Over the next four years, the natural yeasts developed over the centuries ferment, age and gradually oxidize the wine. Also, the vagaries of heat and cold cause the casks to expand and contract, resulting in a slightly oxidized wine, with a strength of about 17% alcohol and very little residual sugar. In the front, the wine is sweet and has a pronounced nuttiness, but on the finish, it is relatively dry -- much like an Amontillado sherry. Poppiano's Vin Santo is a drier style -- a style actually more authentic than found in most other Vin Santos. This Vin Santo is made with 100% Malvasia grapes (most Vin Santos use at least 50% Trebbiano). Count Guicciardini believes that using Malvasia gives better aromatics and a more elegant finish. Poppiano adds no sugar or brandy (Vin Santo Liquoroso, common in Tuscan tourist traps, is a bastardization of an honest tradition). Poppiano's Vin Santo is a true "vino di meditazione"-- a dessert wine to sip for its own unique character. Serve with fruit and cheese course or with dessert (especially savory pastries or desserts with custards). Also delicious with biscotti at the end of the meal...or, merely served alone (after the coffee) |
